A stand-up pouch of ten individually twist-wrapped jelly pearls, each one about the size of a quail egg and the color of warm rice milk. They're built on non-alcoholic koji amazake — the sweet, porridgey kind ladled out in paper cups at winter shrine visits — thickened with konjac and glutinous rice starch so the texture lands halfway between a jelly and a fresh mochi.
Tear the twist and the pearl slides onto your tongue with a cool, slippery skin, then gives way with a genuine mochi stretch: it pulls a little before it breaks, which almost no pouch jelly does. The flavor starts soft and milky-sweet, like rice cooked too long in a good pot, then a thread of grated ginger warms the back of your throat and a dark-sugar note settles underneath. Tiny flecks of real koji rice are suspended in each pearl, so you get the occasional grainy speck that tastes like the bottom of an amazake cup.
People chase it because it only appears from late November, and because the Fujinomiya-area shops sell it chilled in a cooler right next to the hot amazake urns — cold version in one hand, hot in the other. Out-of-towners buy four pouches at the station and regret not buying eight.
The package
Matte stand-up pouch with a resealable spout, roughly palm-height, in a deep Fuji blue that fades to cream at the bottom like snow on a mountain shoulder. A white-capped Mt. Fuji is embossed in glossy spot varnish across the middle, and the product name 甘酒もちっとゼリー runs down the right side in thick brush kanji with a rice-grain dot over the final character. The mascot, Kōjibō — a plump white rice-koji spirit with black bean eyes, pink cheeks and a tiny wooden masu cup worn as a hat — peeks over the mountain ridge holding a steaming cup. A gold burst in the corner reads ノンアルコール, and a small blue tab claims もちもち食感. Inside, each pearl is twisted in translucent cream cellophane printed with a different Mt. Fuji weather scene; one wrapper in every batch is printed in gold foil.
The maker
Invented in 2016 by Suruga Kōjiya Honpo, a four-generation koji shop in Fujinomiya that had spent decades selling rice malt to miso makers and pickle houses. The third-generation owner's daughter, tired of watching leftover amazake go to waste after the New Year shrine rush, started boiling it down with konjac powder in the family kitchen and adding glutinous rice starch until the texture stopped wobbling and started stretching. The first pouches were sold from a folding table outside the shop; a bus tour guide bought thirty, and by the next winter the town's omiyage shelves had them.
Three things to know
- The koji rice is never fully strained out — the maker leaves about 2% of the grains in, which is why each pearl has faint white flecks suspended inside like snow in a paperweight.
- Every batch hides one gold-foil wrapper; bring it back to the Fujinomiya shop and you get a free cup of hot amazake, no expiration.
- The pouch is designed to be frozen. Half-frozen, the pearls turn granita-crunchy on the outside while staying stretchy in the center.
